    one of those filling dishes that makes vegetarian accessible for anyone (except mushroom haters)


    List of Ingredients


    • 1 large or 2 small avocadoes, sliced
    • juice of 1 lemon
    • 250g fettucine
    • 1 tbs pesto
    • 1 onion, sliced
    • 4 garlic cloves, sliced
    • 200g mushrooms, sliced
    • 2 tsp salt reduced soy sauce
    • pepper
    • 1 tbs olive oil
    • whole or shredded basil leaves and lemon wedges to garnish


    Instructions


    1. Place avocadoes on plate and drizzle with lemon juice.
    2. Bring large pan of water to the boil, then cook the fettucine.

    3. Meanwhile, heat oil and stir-fry onion for 1 min over medium-high heat. Add mushrooms and garlic and continue cooking, stirring, for 2 minutes.
    4. Reduce heat to medium and place a lid on the pan. Cook for 5 minutes, stirring once or twice.
    5. Remove from heat and stir in the soy sauce and pepper.
    6. Toss freshly cooked pasta with pesto, mushroom mixture and avocado slices.
    7. Serve immediately with basil and lemon wedges
