    Recipe Introduction

    a very posh lunch. You can add anything to it that will match the flavours. You can go with vintage cheddar, mozzarella or parmesan instead of blue, broccoli and pumpkin instead of the veg etc etc etc. They will all be quite different of course!


    List of Ingredients


    • 20g butter
    • 1 large red onion, chopped
    • 2 sweet potaotes, peeled and diced
    • 150g baby spinach leaves
    • 100g King Island Bass Strait Blue (or similar blue cheese) crumbled
    • 7 eggs, lightly beaten
    • 1/3 cup pure cream or creme fraiche
    • freshly ground pepper


    Instructions


    1. Melt butter in a non stick frying pan. Add onions and potatoes. Cook covered over a medium heat 8-10 minutes, stirring occaisionally until potatoes are just tender.
    2. Add spinach and stir until wilted. Top with crumbled blue cheese.
    3. Combine remaining ingredients and pour over potato mixture. Cover pan with lid or foil and cook over a low heat 20-25 minutes until it is set in the middle.
    4. Place under grill 3-5 min to brown the top. Cut into wedges to serve.


    Final Comments


    Serve with a green salad and a New Zealand sauvignon blanc (they reckon...but I would always get a lovely South Australian wine no matter what I am told about good stuff over seas)
