    when these vegetables are in season make up a lot of these dishes and freeze them. You can use zucchini instead of eggplant or omit the tomatoes if u prefer. I suspect parboiled potatoes (cubed) would be a good addition either way too. Although these dishes make fine side dishes they are hearty and healthy enough to be mains. They are a quick ratatoille and a quick korma

    as it stands serve 2, add more ingredients for more people


    List of Ingredients


    • 1 onion, sliced
    • 3 cloves garlic, finely chopped
    • 3-4 tomatoes, chopped
    • 1 capsicum cut into squares
    • 1 eggplant cut into bite sized cubes
    • water
    • flavourings according to option 1 or option 2
    • olive oil or ghee


    Instructions


    1. for option 1 you will need 2 tbs balsamic vinegar, 1/2 cup red wine (optional), dried herbs (optional), salt and pepper to taste. You will need rice or bread to serve it with.
    2. For option 2 you will need 1 tbs korma paste (or more if you like), 1cm ginger finely chopped (optional) You will need rice or naan to serve it with
    3. Heat oil. Saute onion until fragrant. Add garlic and tomato (and ginger or herbs) and give it 2 min of stir frying.
    4. Add capsicum and when it starts to be fragrant add in (the curry paste if using and) eggplant. Stir well.
    5. Add in (balsamic and) wine or water, season and let it simmer down until all vegetables are soft and flavours are soaked through.


    Final Comments


    both of these dishes will make the house very fragrant, they are both even better as leftovers and are ok to freeze. YUM
