    you may of course use other types of mushrooms


    List of Ingredients


    • 2-3 eggs
    • 100g oyster mushrooms
    • 1 tbs butter
    • salt and pepper


    Instructions


    1. Slice mushrooms and fry in butter on high heat for a few minutes. Finish on low heat for 5 minutes.
    2. Beat eggs in bowl, add salt and pepper and pour into a hot pan with butter.
    3. When set but still soft pour prepared mushrooms over it. Fold in half and slide onto plate. Make 1 per person and slide with fried potatoes and salad.
