    Recipe Introduction


    lol if any shepherds ever have been vegetarian. Serves 4

    you can adjust to all mushroom or all lentil or whatever balance you prefer


    List of Ingredients


    • 1 onion
    • 3 cloves garlic
    • 2 carrots, chopped quite small
    • 2 sticks celery, chopped quite small
    • 12 mushrooms, chopped quite small
    • 1 tin lentils (or soak and cook a comparable amount)
    • herbs as you like (oregano and thyme is nice)
    • 300ml tomato passata
    • 2-3 tbs tomato paste (optional)
    • 1/2 cup wine or verjuice (optional)
    • salt and pepper
    • 6 large potatoes, peeled and cut into pieces
    • butter
    • milk (or cream)
    • grated cheese
    • bayleaf (optional)
    • olive oil


    Instructions


    1. Chop onion and finely chop garlic. Heat oil and saute until translucent.
    2. Add carrot and celery and bayleaf and cook stirring until fragrant and softened. Turn up heat, add in mushrooms and verjuice and stir until steamed. Turn back to low.
    3. Add in tomato passata and paste along with salt and pepper and herbs.
    4. Cook on low for about 10 minutes until flavours well combined.
    5. Place potato pieces in a saucepan adding water and salt. Boil until tender and drain.
    6. Mash with milk and butter, seasoning with salt and pepper. Mix through cheese if you like.
    7. Grease casserole dish or lasagna tray. Put the lentil sauce in it. Top with mashed potato and sprinkle with grated cheese.
    8. Cook in preheated oven for 1/2 hour or until hot and top golden


    Final Comments


    mix spinach or broccoli into the mashed potato (use a bamix) to increase healthiness. Or try adding peas, corn or zucchini to the lentil mix.

    Can be served with salad!
