Cucumber Salad

Recipe Introduction
A very light freshing salad thats good for cleaning the palate and cooling off a hot dish.
List of Ingredients
- 1/2 cucumber
- 1 tbsp rice vinegar (or white in a pinch)
- 2 tbsp sugar
- 1/2 tsp salt
- 2 tbsp hot water
- 1 small shallot, thinly sliced
Instructions
- Peel the cucmber, halve it and deseed it using a melon baller or a teaspoon.
- Slice the cucumber thinly and arrange the slices on a serving plate.
- To make the dressing, combine hte vinegar, sugar and salt in a bowl. Pour in hot water and stir until sugar has dissolved.
- Pour the dressing evenly over the cucumber slices.
- Sprinkle the shallot over the cucumner. Chill before serving.
Final Comments
I find its a nice flavor and visual touch to only half peel the cucumber. The dark green makes a great contrast.
