    A very light freshing salad thats good for cleaning the palate and cooling off a hot dish.


    List of Ingredients


    • 1/2 cucumber
    • 1 tbsp rice vinegar (or white in a pinch)
    • 2 tbsp sugar
    • 1/2 tsp salt
    • 2 tbsp hot water
    • 1 small shallot, thinly sliced


    Instructions


    1. Peel the cucmber, halve it and deseed it using a melon baller or a teaspoon.
    2. Slice the cucumber thinly and arrange the slices on a serving plate.
    3. To make the dressing, combine hte vinegar, sugar and salt in a bowl. Pour in hot water and stir until sugar has dissolved.
    4. Pour the dressing evenly over the cucumber slices.
    5. Sprinkle the shallot over the cucumner. Chill before serving.


    Final Comments


    I find its a nice flavor and visual touch to only half peel the cucumber. The dark green makes a great contrast.
