    Recipe Introduction

Got this really good breakfast from the Costco Connection, November 2010 issue. It is so good for breakfast.

    List of Ingredients

    French Toast:
    8 cups break cubes/crumbs
    3 apples, peeled and chopped
    8 oz. softened cream cheese
    3/4 c. brown sugar
    1/4 cup Apple juice
    1 tsp. vanilla, divided
    1/2 cup toffee bits
    5 eggs
    3/4 cup mild

    Apple Syrup:
    1 cup sugar
    2 Tbsp. cornstarch
    1/2 tsp. cinnamon
    2 c. apple juice
    2 Tbsp. lemon juice
    5 Tbsp. butter

    Recipe

    To make the French Toast:
Place half of the bread cubes in a grested 13 x 9 inch baking pan; top with apples. In a large bowl, beat the cream cheese, sugars, apple juice, and 1 tsp. of vanilla until smooth. Stir in toffee bits. Spread over apples. Top with remaining bread cubes.

In another large bowl, beat the eggs, milk, and 1 tsp. vanilla until well blended. Pour over bread. Cover with foil, and refrigerate overnight.

Remove pan from refrigerator 30 minutes before baking. Bake, uncovered at 350 for 40-45 minutes or until a knife inserted in the middle comes out clean.

While the french toast is baking, prepare the syrup.

    To make the syrup:
In a medium sized saucepan, whisk together the sugar, cornstarch, cinnamon, nutmeg, apple juice, and lemon juice. Heat to a boil, whisking constantly. Boil for 1 minute. Stir in butter. Serve over warm french toast.

(Note: wait until everything is heated before adding cornstarch. Take a little bit out of the pan, and put it into a cup. Add the cornstarch to the small cup of liquid and stir it. Then pour back into the pan.)

    Makes 8 servings.

Can put a dallop of whipped cream over the concoction too!
