    THE MAMA'S COOK BOOK - Louise H. Spaulding

    List of Ingredients




    2 cups sifted flour
    1 tsp. salt
    4 tsp. baking powder
    2 tbsp. sugar
    3 egg yolks, well beaten
    1/2 cup butter or cooking oil
    1 1/4 cups milk
    3 egg whites stiffly beaten

    Recipe



    Sift flour and measure, resift into mixing bowl with baking powder, salt and sugar. Mix well beaten egg yolks, milk and melted fat. Turn all at once into the sifted dry ingredients and beat until smooth. Fold in stiffly beaten egg whites. Bake 3 1/2 minutes in preheated waffle iron. Makes 6 waffles. (Note: Sour milk or buttermilk may be used instead of sweet milk by using 1/2 baking powder called for and adding 1/2 tsp. baking soda.)
