    Chocolate Breakfast Cookie

    My version of recipe published in Woman's World

    Recipe Introduction

    Good tasting cookies that are believed to jump start your metabolism in the morning. I find them good during the day, also, instead of purchased bars.

    List of Ingredients

    1 1/4 C Whey Low (granulated date sugar-original recipe)
    2 T canola oil
    3/4 C brown rice syrup
    10 oz prune puree, baby food and/or applesauce
    2 eggs
    1 tsp vanilla
    3 cups old fashion rolled oats(I have used quick)
    2 cups unprocessed bran
    2 cups whole wheat pastry flour(or combination of it and
    other flours-e.q. quiona, soy, buckwheat)
    1 1/2 t baking soda
    1/2 t baking powder
    1/2 t salt
    1/3 C unsweetened cocoa powder
    1 1/2 chocolate chips
    1 C roasted pecans

    Recipe

    Preheat oven to 350. Roast pecans 5 - 8 minutes.

    Combine WheyLow, canola oil, brown rice syrup, prune/apple puree, eggs and vanilla.

    In another bowl combine oats, bran, flour(s), baking soda, baking powder, salt and cocoa.

    Combine mixtures and add choc chips and cooled pecans.

    Drop 1/2 C on sprayed cookie sheet and bake for 15 minutes.
    Remove to cooling rack. Can refrigerate and bake as needed.
