Chicken Yellow Rice

List of Ingredients
- 1 fresh whole chichen
- 1 tablespoon oil
- 1 garlic clove; crushed
- 1 onion ;chopped
- 1 cup rice
- 3 cups water
- 1/8 teaspoon saffron
- 1 cup broccoli, chopped
Instructions
- In a kettle saute cut-up chicken in oil with crushed garlic clove and chopped onion until lightly browned. Drain any fat. Add rice, water, and saffron and bring to a boil. Reduce the heat and simmer, covered until the rice is tender, about 30 minutes. Add chopped broccoli, cover and cook for 5 minutes.
