    List of Ingredients


    • 1/2 pound fat back or salt pork
    • 10-12 ears of corn
    • 1/2 cup flour
    • 1 tablespoon salt
    • 1 teaspoon black pepper
    • 4 cups water


    Instructions


    1. Cut meat into small slices and parboil (to get the salt out). Then cook as you would bacon. Drain the fat into a large skillet. Shuck the corn, pick out as many of the silks as possible. Wash corn in cold water, cut from the cob in small cuts (go around each ear twice, then scrap the cob). Mix together flour, salt, pepper, and water. Add corn and mix well. Pour into hot skillet and cook at low to medium heat for an hour, sttirring often. If corn gets too dry, add a little more water. If you like, you can add a few slices of the meat into the corn while it's cooking.
