    Oatmeal Applesauce Muffins

    List of Ingredients


    • 1 cup rolled oats (or quick oats)
    • 1 cup buttermilk (see comments)
    • 1 cup whole wheat flour
    • 1 1/2 tsp baking powder
    • 3/4 tsp baking soda
    • 1 tsp salt
    • 1/2 cup packed brown sugar
    • Cinnamon, nutmeg, allspice or apple pie spice to taste
    • 1/2 cup applesauce
    • 1 egg


    Instructions


    1. In small bowl, mix oats with buttermilk, heat for 30 seconds in microwave until just warm. Allow to sit while mixing other ingredients.

    2. Combine flour, baking powder, baking soda, salt, brown sugar and spices. Mix until no brown sugar lumps remain.

    3. Add applesauce and egg to oat mixture.

    4. Add oat mixture to dry ingredients and stir until just moistened.

    5. Spoon into muffin tin prepared with paper liners or sprayed with non-stick cooking spray. Fill 1/2-3/4 full.

    6. Bake at 375 degrees for 20-25 minutes. Makes 12 muffins.



    Final Comments


    You can use skim milk with 1 tablespoon lemon juice or vinegar in place of buttermilk.
