    RICH AND CREAMY EGG NOG


    List of Ingredients


    • 1 qt (4 cup)s milk
    • 1 (3.4-oz 4-serv size) pkg. vanilla instant pudding mix
    • 1 (8-oz) carton (1 cup) refrigeratetor frozen fat-free egg product, thawed
    • 1 tsp vanilla
    • 1 tsp rum extract or 1/4 cup light rum
    • 1/4 tsp salt
    • 1/4 tsp nutmeg
    • Whipped cream, if desired
    • Nutmeg, if desired


    Instructions


    1. In large bowl, combine 2 cups of the milk and pudding mix; beat 1 minute or until smooth.
    2. Add remaining 2 cups milk, egg product, vanilla, rum extract, salt and 1/4 teaspoon nutmeg; beat well.
    3. Cover; refrigerate until serving time. Serve topped with whipped cream if desired and a sprinkle of nutmeg (optional).  
    4. 10 (1/2-cup servings) Per Serving: 130 calories 5 g total fat

    Thanks, Liz!!Liz's Notes: I don't use either the rum flavoring or the rum, as I don't like the taste. For the vanilla flavoring I use the 'double strength' type from Penzeys. I've used only the regular vanilla instant pudding, but I would think the French Vanilla Instant Pudding Mix would taste good too.
