AL: Bailey's Irish Ice: Guinness Gelato Meets Iced Coffee

    Recipe Courtesy: Bailey's Irish Cream

Prep Time: 5 minutes - Total Time: 5 minutes
    Yield: 1 Drink

Talk about a decadent St. Patrick's Day cocktail, this is it and, of course, it comes from Bailey's. It begins with one of the Irish cream's new flavors, mint chocolate, which is beautiful twist on the original. This is mixed with coffee and espresso for a prominent kick. Then, a little beer gelato tops it off (that is besides the whipped cream mint). It's absolutely delicious and ideal for an Irish dessert drink.

If you cannot find or make Guinness gelato, coffee ice cream is a good substitute.

    Ingredients:
    • 1 ounce Baileys Irish Cream with a hint of Mint Chocolate
    • 1 ounce Iced Coffee
    • 2 scoops Guinness Gelato OR coffee ice cream

    • 1 cup of Chipped Ice

    • 1 tablespoon Espresso
    • Mint sprig and whipped cream for garnish

    Preparation:
Add Baileys with a hint of Mint Chocolate, iced coffee and Guinness gelato to a blender.

Blend on high with chip ice until smooth.

Pour into a chilled coupe, hurricane, or ice cream glass.

Top with espresso, a mint sprig and whipped cream.
