    Quinoa Mixed Green Salad (2)

    Quinoa is high in protein, low in fat and cooks quickly--a perfect ingredient to toss in this citrus-flavored salad.

    Ingredients:
    1 cup cooked quinoa
    1 tray Green Giant™ Just for One™ peas and corn in a basil butter sauce (from 17-oz package)
    1 teaspoon grated lemon peel
    2 tablespoons fresh lemon juice
    1 tablespoon olive oil
    1/4 teaspoon salt
    6 cups spring salad greens
    2 clementines or 1 medium orange, peeled and sectioned
    1 cup chopped sweet red bell pepper (1 medium)

    Directions:
    • 1 Cook quinoa as directed on package. Cool; set aside.

    • 2 Cook tray of peas & corn in microwave as directed on package; cool.

    • 3 In small bowl, mix lemon peel, lemon juice, olive oil and salt; set aside.

    • 4 In medium bowl, mix salad greens, clementine sections, bell pepper, cooked quinoa and peas & corn. Add lemon juice mixture; toss to combine.
