Oven-Roasted Veggie Dip

With nothing but fresh vegetables and garlic, our Oven Roasted Veggie Dip is as healthy as can be. Got leftovers? Spread it on a sandwich in place of mayo. You'll thank us once you do!
What You'll Need:
• 3 zucchini, sliced
• 1 red bell pepper, sliced
• 1 red onion, sliced
• 2 cloves garlic, peeled
What To Do:
1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil; coat with cooking spray.
2. Spread vegetables on prepared baking sheet.
3. Bake 15 minutes and stir. Coat vegetables with cooking spray and bake additional 15 minutes, or until vegetables are tender.
4. Transfer to blender or food processor; process 30 to 60 seconds, or until smooth. Serve warm or cold.
