    Pizza for breakfast?! You got it! Our Pizza Breakfast Cups make a great on-the-go morning meal that everyone in the family will love (especially the kids!). Hey, how about letting everyone choose their favorite pizza toppings before they go into the oven?

    What You'll Need:
    • 6 slices whole wheat bread
    • 3 tablespoons light margarine
    • 2 tablespoons finely chopped onion
    • 1/4 cup finely chopped green bell pepper
    • 1/4 cup finely chopped fresh mushrooms
    • 2 tablespoons finely chopped pepperoni
    • 1 cup egg substitute
    • 1/4 cup reduced-fat shredded mozzarella cheese

    What To Do:
    1. Preheat oven to 400 degrees F.

    2. Using a rolling pin, flatten each slice of bread. Cut 1-inch slits in each slice about 1 inch apart. Lightly brush both sides of bread with margarine. Place into an ungreased 6-cup muffin tin, overlapping sides as needed to fit.

    3. Bake 10 minutes, or until lightly toasted.

    4. Meanwhile, coat a large skillet with cooking spray; over medium heat, cook onion, peppers, and mushrooms 8 to 10 minutes, or until soft. Add pepperoni and egg substitute to vegetables and cook until eggs are set but still moist. Evenly spoon egg mixture into toast cups, then sprinkle with cheese.

    5. Place back in oven 1 to 2 minutes, or until cheese is melted. Serve immediately.
