    Caribbean Tilapia

    Serves 4; serving size: 1/4 Recipe


    1/4 cup onion, thinly sliced
    1/4 cup green bell pepper, thinly sliced
    1 clove garlic, minced
    2 Tbsp Smart Balance margarine
    1 lb tilapia fillets
    Pepper, to taste
    1 (8-oz) can no-added-salt stewed tomatoes
    2 Tbsp lime juice

    Sauté onion, green pepper, and garlic in margarine; remove from skillet and set aside. Place fish in skillet; season with pepper. Spoon tomatoes and sautéed vegetables over fillets. Sprinkle with lime juice. Bring to a boil and then simmer, covered, for 5 minutes or until fish flakes easily when tested with a fork.
