    Florentine Fish Roll-Ups

    Florentine Fish Roll-Ups sounds fancy, but this recipe is as at home for a weeknight meal as it is super for a company meal. It's got that holiday look - but boy is it ever easy!

    What You'll Need:
    • 1 (10-ounce) package frozen chopped spinach, thawed and well drained
    • 2 tablespoons grated Parmesan cheese
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 4 (6-ounce) white-fleshed fish fillets, such as sole, flounder, or tilapia
    • Cooking spray
    • 1/2 teaspoon paprika

    What To Do:
    1. Preheat the oven to 350 degrees. Coat a rimmed baking sheet with cooking spray.

    2. In a medium bowl, combine the spinach, Parmesan cheese, garlic powder, salt, and pepper; mix well.

    3. Spread the spinach mixture evenly over the fish fillets. Roll up jellyroll style and place seam side down on the baking sheet.

    4. Lightly coat the fish with the cooking spray and sprinkle with the paprika. Bake for 18 to 22 minutes, or until the fish flakes easily with a fork.
