    Got a hankerin' for a burger, but want to eat light and healthy? Then sink your teeth into this quick and easy Mr. Food Test Kitchen diabetes recipe for Salmon Burgers and satisfy your craving.

    What You'll Need:
    • 1 (12-ounce) can salmon, drained, flaked
    • 1/3 cup finely chopped onion
    • 1/4 cup liquid egg substitute
    • 3/4 cup crushed multi-grain saltine crackers, divided (about 21)

    What To Do:
    1. In a medium bowl, mix salmon, onion, egg substitute, and 1/4 cup crumbs.

    2. Measure 1/3 cup mixture for each patty, and form into 6 patties. Coat with remaining crumbs.

    3. Coat a medium nonstick skillet with cooking spray. Preheat over medium-high heat. Cook patties about 6 minutes, turning halfway through cooking.
