    Icy Tropical Grape Skewers

    This frozen tropical-tasting treat is good-for-you and is so much fun to make and eat. Our Icy Tropical Grape Skewers are a super snack or party treat. Best part… these are so good, even if you don't have diabetes, you'd still want to enjoy 'em!

    What You'll Need:
    • 1/2 cup flaked sweetened coconut
    • 1 can (20-ounce) pineapple chunks, juice set aside
    • 1 1/2 cup red or green grapes
    • 16 (5 - 6 inch) wooden skewers

    What To Do:
    1. Preheat oven to 350 degrees.

    2. To toast coconut, spread in single layer on baking pan. Bake for about 5 minutes, stirring frequently, until evenly brown. Watch carefully because coconut burns easily. Remove from pan and cool.

    3. Place toasted coconut on dinner plate. Pour pineapple juice into pie pan. Thread pineapple chunks and grapes alternately on skewers. Roll in juice, then coconut.

    4. Arrange kabobs on baking pan, cover with foil and freeze. To serve, remove from freezer and thaw for about 3 minutes. Serve immediately.


    TIP: For a quick pick-me-up snack, keep frozen grapes in freezer.
