We all crave pasta from time, but it isn't always the best choice when you're following a diabetic diet. Luckily, there are some veggies, like zucchini, that make healthy and yummy substitutions. We think you'll love our recipe for Zoodles, which is low-fat, low-carb, and very tasty!
What You'll Need:
• 3 zucchini
• 2 tablespoons margarine
• 2 cloves garlic, minced
• 1/8 teaspoon salt
• 1/4 teaspoon black pepper
• 2 tablespoons grated Parmesan cheese
What To Do:
1. Using a potato peeler, cut zucchini into thin, noodle-like strips.
2. In a large skillet over medium heat, melt margarine. Add garlic, zucchini, salt, and pepper and cook 6 to 8 minutes, or until tender. Sprinkle with Parmesan cheese just before serving.
Notes:
This is a delicious side dish but by adding chicken or shrimp, you've got a great main dish!
