Baked Brownie Pudding

Serves: 8
• 1 cup all purpose flour
• 2 tsp baking powder
• 1/4 tsp salt (necessary)
• 3/4 cup granulated sugar
• 6 Tbsp cocoa powder 'divided'
•
• 1/2 cup milk
• 1 tsp vanilla extract
• 2 Tbsp unsalted butter, melted
•
• 3/4 cup brown sugar
• 1-3/4 cups hot water
• 2 cups whipped cream, 'optional'
Preheat oven to 350°F. Sift together first 4 ingredients and 2 Tbsp cocoa in a bowl. Add next 3 ingredients and mix until smooth. Pour into an 8 in. baking pan.
In a separate bowl, mix brown sugar and 1/4 cup cocoa well. Sprinkle over batter already in pan. Pour hot water over. Bake 40-45 minutes. Serve warm with a dollop of whipped cream.
