    Creamy Pineapple Salad

    The welcoming flavor of pineapple makes this Creamy Pineapple Salad one that fits company as well as any time at all. With lots of lighter ingredients, it's surprisingly refreshing and rich-tasting.

    What You'll Need:
    • 1 (8-ounce) container reduced-fat small curd cottage cheese, well drained (see Note)
    • 1 package (.3-ounce) instant sugar-free lime gelatin mix
    • 1 (8-ounce) container frozen reduced-fat whipped topping, thawed
    • 1 (8-ounce) can crushed pineapple, drained

    What To Do:
    1. In a large bowl, combine cottage cheese and lime gelatin. Mix in whipped topping and pineapple.

    2. Chill at least 1 hour before serving.

    Notes:
    To drain the cottage cheese, place a wire mesh strainer over a medium bowl, spoon cottage into strainer, and refrigerate 1 hour, or until well drained.
