    Marinated Steak Salad

    Add variety to your normal dinner rotation with this healthy and filling Marinated Steak Salad. It's super easy and impressive presentation will have your gang's hunger satisfied in no time!

    What You'll Need:
    • 2 tablespoons olive oil
    • 1 tablespoon fresh lime juice
    • 1 small onion, minced
    • 1 tablespoon crushed red pepper*
    • 1/4 teaspoon salt
    • 1 (1-pound) beef flank steak
    • 1 head romaine lettuce, cut into bite-sized pieces
    • 6 plum tomatoes, sliced into wedges
    • 2 tablespoons sliced olives
    • 1/4 cup (1 ounce) crumbled reduced-fat feta cheese

    What To Do:
    1. In a large resealable plastic bag, combine the oil, lime juice, onion, crushed red pepper, and salt; mix well. Add the steak then seal, and turn to coat. Marinate in the refrigerator for at least 4 hours, turning occasionally.

    2. Drain the steak, discarding the marinade.

    3. Coat a medium skillet with nonstick cooking spray.* Heat the skillet over high heat, add the steak, and cook for 4 to 5 minutes per side for medium-rare, or to desired doneness. Slice the steak thinly across the grain.

    4. Place the lettuce on a serving platter and arrange the steak slices and tomato wedges over it. Sprinkle with olives and feta cheese. Serve immediately.

    5. *To make this a gluten-free recipe, use seasonings with no added starch from a gluten-containing source, and nonstick cooking spray with no flour added.

    Notes:
    To save time, marinate the steak the night before. Then, when you're ready, cook the meat and prepare the salad. Squeeze it with a fresh lime or top with low-fat dressing.
