    SERVING SIZE 1 leaf with 1/4 salad toppings

    What a super salad for anyone who needs a great diabetes recipe! Our all fresh-ingredient version of Mother Nature's Salad is delicious and nutritious all-in-one!

    What You'll Need:
    • 4 leaves Bibb lettuce
    • 4 large radishes, thinly sliced
    • 1 cup thinly sliced cucumber
    • 1/2 cup thinly sliced red onion
    • 2 tablespoons Sunny Citrus Vinaigrette (see Note)

    What To Do:
    1. On 4 salad plates, arrange a lettuce leaf, radishes, cucumber, and red onion, distributing evenly. Drizzle with dressing.


    Notes:
    To make your own Sunny Citrus Vinaigrette, in a small bowl, whisk together 3 tablespoons fresh orange juice, 1 tablespoon fresh lemon juice, 2 tablespoons canola or olive oil, and 2 teaspoons Splenda granulated sweetener. Makes about 1/3 cup.
