Tropical Chicken Salad Pita

Ingredients:
2 cups diced cooked chicken breasts
1/2 cup sliced celery
1/2 cup chopped mango
1/4 cup sliced water chestnuts
2 cups diced pineapple
1 cup mandarin oranges, packed in their
own juice and drained
1/4 cup low-fat mayonnaise
2 Tbsp low-fat sour cream
1 tsp coconut extract
Combine all ingredients and refrigerate for 1-2 hours before serving. Place over greens or stuff into whole wheat pita bread.
