    Custard Sauce

    Serves 6-8

    I have fond memories of eating fruit and pies topped with hot custard as a child. These were staple desserts, or puddings (I grew up in England), served with school lunches. Custard is thick and creamy, and not exactly a low fat, low calorie addition to dessert, but you can make low-fat custard by using nonfat milk and only one egg. Here's how:

    Ingredients:
    • 2 cups nonfat milk
    • 1/4 cup sugar
    • 1 tbsp cornstarch
    • 1 egg
    • 1 tsp vanilla extract

    Preparation:
    Heat milk in a small saucepan on medium-low until simmering.
    Meanwhile whisk sugar and cornstarch together. Add egg, and whisk until no lumps remain. Add vanilla extract.
    Gradually stir in hot milk into egg mixture. Return milk and egg mixture to pan. Heat on medium, stirring constantly, until thickened.

    Per Serving: Calories 78, Calories from Fat 8, Total Fat 0.9g (sat 0.4g), Cholesterol 36mg, Sodium 52mg, Carbohydrate 13.7g, Fiber 0g, Protein 3.8g
