    Blueberry-Coconut Slush

    Makes 2 cups; 1 to 2 servings

    Frozen blueberries sneak essential nutrients into this delicious, gulp-worthy slush that your kids will love.

    Ingredients:
    1 cup pineapple sherbet or sorbet
    1 cup frozen blueberries
    3/4 cup canned reduced-fat coconut milk
    1/4 cup sweetened shredded coconut

    Preparation:
    In a blender, combine 1 cup pineapple sherbet or sorbet, 1 cup frozen blueberries, 3/4 cup canned reduced-fat coconut milk, and 1/4 cup sweetened shredded coconut. Whirl until smooth and pour into a chilled tall glass (at least 16 oz.).

    One serving equals: Calories 266 (Calories from fat 33 %); Protein 2.8 g; Fat 9.9 g (Satfat 6.6 g); Carbohydrate 46 g; Fiber 3.1 g; Sodium 91 mg; Cholesterol 4.8 mg
