    Watermelon-Lime Soda

    Cooking Light - July 2014 - Robin Bashinsky,
    Serves 8 (serving size: about 1-1/3 cups)

    Ingredients:
    3/4 cup sugar
    1/2 cup water
    1/4 cup chopped peeled fresh ginger
    10 cup diced watermelon
    3/4 cup fresh lime juice
    4 cups chilled club soda
    Ice
    Garnish: mint sprigs

    Preparation:
    Combine sugar, water, and ginger in a small saucepan over high heat. Cook until sugar -dissolves, stirring with a whisk. Remove from heat; cover and let stand 15 minutes. Strain; discard solids.

    Working in batches, place diced watermelon and fresh lime juice in a blender; process until smooth. Strain watermelon mixture through a fine sieve into a pitcher; discard solids. Stir in sugar syrup and chilled club soda. Serve over ice; garnish, if desired.

    One serving equals: Calories 136; Fat 0.3 g; Sodium 3 mg
