    Stir-fried Vegetable Mix

    Serves 6
    Prep Time: 20 mins. - Cook Time: 10 mins.

    Ingredients:
    3 tbsp salad oil
    2 med carrots, cut in matchstick-thin strips
    1 med onion, thinly sliced
    1 small bunch broccoli, cut in 2" x 1/2" pieces
    1/8 tsp salt
    1/2 tsp sugar
    4 oz can whole mushrooms, undrained

    Preparation:
    In 12-inch skillet over high heat, in hot oil, cook carrots, onion and broccoli, stirring quickly and frequently, about 3 to 4 minutes.

    Add salt, sugar and mushrooms with their liquid; cover and cook 5 to 6 minutes until vegetables are tender-crisp, stirring occasionally.

    One serving equals: Calories: 96 Total Fat 11g (Saturated Fat 5g); Carbohydrates 9g; Dietary Fiber 4g; Cholesterol 1mg; Protein 4g; Sodium 75mg
