Serves 4; serving size: 1/4 Recipe
3/4 medium onion, diced
1/4 cup Smart Balanced Omega oil
1 small zucchini, cut into 1/4-inch cubes
1 clove garlic, finely chopped
1 small green bell pepper, cut into small pieces
2 tomatoes, peeled and coarsely chopped
3/4 small eggplant, peeled and cubed
1/2 tsp basil
1/2 tsp oregano
Sauté onion in oil in a large skillet until transparent. Add all remaining ingredients. Cover and cook over medium heat for about 45 minutes, stirring occasionally. Add a little water if necessary. May be served hot or chilled.
