2 c all purpose flour
2/3 c butter, cut into pieces and softened
1/2 c superfine sugar
1 tsp vanilla extractRecipe
Lightly grease a cookie sheet with a little butter. Preheat oven to 350 degrees.
Sift the flour into a large bowl and rub in the butter with your fingers until the mixture resembles fine bread crumbs. Stir in the sugar and vanilla and bring together to form a firm dough.
On a lightly floured surface, roll out the dough to a thickness of about 1 inch. Stamp out shapes with a cookie cutter measuring about 2 inches wide. Roll and repeat until dough is used up.
Bake at 350 degrees for 15-20 minutes, until the cookies are golden. Transfer to a wire rack and allow to cool slightly before serving.
