    Chocolate "Ooey" Pecan Pie

    • 1/2 cup soft margarine melted
    • 1 cup light corn syrup
    • 1 cup sugar
    • 1/4 cup cocoa
    • 4 eggs, beaten
    • 1teas. vanilla
    • 1 teas. salt
    • 1/2 cup chopped pecans
    • 1/2 cup flaked coconut
    • CRUST:
    • 36 vanilla wafers, crushed
    • 6 Tbls. melted margarine
    • 1/1/2 cup crushed pecans
    • 3/8 cup sugar


    Instructions


    1. Crust preparation: Combine ingredients and press 2/3 of mixture into pie pan, reserving 1/3 for topping.

    2. Cool pie shell in refreigerator for at least an hour (or freeezer for 20 minutes).

    3. Pie Preparation: Combine first 4 ingredients in saucepan; cook over low heat, stirring constatly until sugar dissolves. Cool slightly.

    4. Add eggs slowly as not to cook egg, vanilla and salt.

    5. Stir in pecans and coconut and pour into unbaked pie shell.

    6. Top with reserved crust mixture.

    7. Bake at 325 degrees for 55 minutes.
