    List of Ingredients


    • 1/2 cup butter
    • 1/4 cup sugar
    • 1/4 teas. salt
    • 1 egg
    • 1 1/4 cups unsifted flour
    • TOPPING
    • 2 eggs
    • 1/2 teas. salt
    • 1 1/2 cups firmly packed brown sugar
    • 2 Tbls. flour
    • 1/2 teas. baking powder
    • 1 teas. vanilla
    • 1 cup chopped pecans
    • 1/2 cup flaked coconut.
    • LEMON ICING
    • 1/2 cups sifted powdered sugar
    • 3 Tbls. lemon juice
    • 2 Tbls. melted butter


    Instructions


    1. For pastry base, cream butter, sugar and salt.
    2. Beat in eggs until creamy. Add flour.
    3. Spread mixture evenly in 9X13" baking pan.
    4. Bake for 15 minutes at 350 degrees
    5. For topping, beat eggs with brown sugar until light and fluffy.
    6. Stir in flour, baking powder, salt, vanilla, pecans and coconut.
    7. Spoon over pastry evenly. Return to oven for 30 minutes.
    8. Cool before spreading with icing.
