List of Ingredients
- 1/2 cup butter
- 1/4 cup sugar
- 1/4 teas. salt
- 1 egg
- 1 1/4 cups unsifted flour
- TOPPING
- 2 eggs
- 1/2 teas. salt
- 1 1/2 cups firmly packed brown sugar
- 2 Tbls. flour
- 1/2 teas. baking powder
- 1 teas. vanilla
- 1 cup chopped pecans
- 1/2 cup flaked coconut.
- LEMON ICING
- 1/2 cups sifted powdered sugar
- 3 Tbls. lemon juice
- 2 Tbls. melted butter
Instructions
- For pastry base, cream butter, sugar and salt.
- Beat in eggs until creamy. Add flour.
- Spread mixture evenly in 9X13" baking pan.
- Bake for 15 minutes at 350 degrees
- For topping, beat eggs with brown sugar until light and fluffy.
- Stir in flour, baking powder, salt, vanilla, pecans and coconut.
- Spoon over pastry evenly. Return to oven for 30 minutes.
- Cool before spreading with icing.
