    Pacific Lime Mold

    Recipe Introduction

    We always have this on Thanksgiving. My absolute favorite!

    List of Ingredients

    1 3 oz. box lime jello
    1 C hot water (for jello)
    1 9 oz. can crushed pineapple (small Dole can)
    Cold water
    1 C small curd cottage cheese
    1/2-3/4 container of Cool Whip
    1/2 C chopped pecans

    Recipe

    Dissolve 1 3oz pkg lime jello in 1 cup boiling water.
    Add juice from 1 can (9 oz) crushed pineapple and chill until slightly thickened. Beat until frothy. Fold in pineapple, 1 cup small curd cottage cheese, 1/2 container Cool Whip and 1/2 cup chopped nuts (I use pecans). Chill until firm. Makes 6-8 servings.
