    Lemon Lovers Pound Cake

    List of Ingredients


    • 1 cup butter (no substitutes) softened
    • 3 cups sugar
    • 6 eggs
    • 5 tblsp. lemon juice
    • 1 tblsp. grated lemon peel
    • 1 sp. lemon extract
    • 3 cups flour
    • 1/2 tsp. baking soda
    • 1/2 t sp. salt
    • 1 1/ 4 cup sour cream
    • ICING
    • 1/4 cup sour cream
    • 2 tblsp. butter, softened
    • 2 1/2 cups powdered sugar
    • 3 tblsp. lemon juice
    • 2 tsp. lemon peel, grated


    Instructions


    1. In bowl, cram butter and sugar until light and fluffy ( about 5 minutes,.) Add eggs one at a time, beating well after each addition. Stir in lemon juice, peel and extract. Combine flour, baking soda and salt, add to creamed mixture, alternately with sour cream. Beat just until combined. Pour into greased and floured 10 inch tube pan. Bake at 350 degrees 55-60 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes before removing from pan to wire rack to cool completely. For icing. In bowl beat butter and sour cream until blended, gradually add powdered sugar. Beat in lemon juice and peel. Drizzle over cake. Store in refrigerator. 12 servings.
