Banana Cream Pie

- Baked 9-inch pie shell
- 1/3 cup flour
- 2/3 cup sugar
- 1/4 teaspoon salt
- 2 cups milk, scalded
- 3 egg, separated
- 3 medium bananas
- 1 teaspoon vanilla
- 2 tablespoons butter
Instructions
- Combine flour, sugar and salt in saucepan. Slowly blend in scalded milk. Cook, stirring constantly, over medium heat until mixture thickens and boils. Continue stirring 1 minute.
- Remove from heat and add a little hot mixture to beaten egg yolks. Quickly stir into mixture in saucepan.
- Return to medium heat and cook, stirring constantly for 3 minutes or until it thickens again and mounds slightly.
- Remove from heat add butter and vanilla, stirring until butter is melted. Cool.
- Slice peeled firm bananas into pie filling and stir gently to cover bananas with filling. Pour into pie shell. Chill until firm. Serve with whipped cream.
