    List of Ingredients


    • 4 eggs
    • 2 cups half and half
    • 1/2 cup sugar
    • 1 teaspoon vanilla
    • 1 1/2 cups cooked rice, cooled
    • 1/2 to 3/4 cup raisins, if desired
    • 1/8 teaspoon nutmeg
    • 1/8 teaspoon cinnamon


    Instructions


    1. In a 2 quart casserole beat eggs, add half and half, sugar, vanilla and salt. Beat until combined but not foamy. Stir in rice and raisins.
    2. Place casserole in a larger bakeing dish on an oven rack and pour boiling water in to a depth of one inch.
    3. Bake at 325 degrees for 30 minutes. Stir well, sprinkle with nutmeg and cinnamon. Bake for 20 to 30 minutes more or until knife inserted near center comes out clean.
    4. Serve warm or cold.
