    Frecadilla (Danish Meatballs)

    Handed down from my Danish grandmother


    Recipe Introduction


    I grew up eating these wonderful meatballs and so did my kids.


    List of Ingredients


    • 2 pounds lean ground beef
    • 1 medium onion
    • 1/2 cup evaporated milk
    • 1 tube Saltine crackers
    • salt and pepper to taste
    • vegetable oil for frying


    Instructions


    1. Put crackers in food processor bowl and process to fine crumbs, set aside. Put onion in food processor and process until finely minced.
    2. In large bowl, mix together ground beef, minced onion, evaporated milk, salt and pepper. Add enough of the cracker crumbs to make the mixture firm enough to make meatballs.
    3. Heat about 1/2- to 1-inch of oil in frying pan to about 350 degrees. Using a metal serving spoon, dip spoon into oil then use it to scoop out an oval shaped meatball from your bowl. Place meatballs in frying pan and fry, turning to brown all sides and cook until meat is done.


    Final Comments


    My Danish grandmother always served this with steamed potato wedges and cooked green cabbage.
