Pineapple Zucchini Cake

3 eggs
2 c. sugar
2 tsp. vanilla
1 c. cooking oil
2 c. zucchini, peeled and grated
3 c. flour
1 tsp. baking powder
1/2 c. raisins
1 tsp. salt
1 tsp. soda
1 c. nuts
1 c. crushed pineapple, drained Recipe
Beat eggs until fluffy, add sugar, vanilla, oil and zucchini. Blend well. Add dry ingredients and mix well. Stir in pineapple, raisins and nuts. Bake in 1 large greased and floured loaf pan or 2 loaf pans. Bake at 350 degrees for 1 hour.
