Pumpkin Dot Coffeecake

1 cup sugar
1/4 cup butter
2 eggs
1 tsp. vanilla
2 cups flour
1 Tbsp. (yes, 1 tablespoon) baking powder
1/2 tsp. salt
1 cup milk
1/2 cup canned pumpkin
3 tbsp. brown sugar
1 tsp. cinnamon
1 tbsp. butter, melted
Recipe
Preheat oven to 350 degrees.
In a mixing bowl cream together the sugar and the 1/4 cup butter. Beat in eggs and vanilla.
Stir together flour, baking powder and salt. Add to creamed mixture
alternately with the milk.
Blend the pumpkin with 3/4 cup of the batter. Spread remaining batter in a greased 12 x 7 1/2 x 2 inch baking dish. Drop pumpkin mixture over batter by teaspoonfuls.
Combine brown sugar, cinnamon and the melted butter. Sprinkle over all.
Bake for 35 to 40 minutes. Serve warm.
Makes 8 to 10 servings.
Note: I use a 9x13 inch pan and bake for 30 to 35 minutes.
