Corn Flake Muffins

1 1/3 c. all purpose flour
1 T. baking powder
½ tsp. salt
¼ c. sugar
2 c. corn flakes
1 ¼ c. milk
1 egg
1/3 c. vegetable oil
Recipe
Stir together flour, baking powder, salt and sugar. Set aside.
Measure corn flakes and milk in large bowl. Stir to combine. Let stand two minutes or until cereal in softened. Add egg and oil. Beat well.
Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased muffin pans cups.
Bake at 400 about 25 minutes or until lightly browned. Serve warm.
Yields: 12 muffins
