    # 12 to 16 ounces loose pork sausage (mild, hot, country or your favorite)
    # One medium onion
    # Salt and pepper to taste
    # 6 frozen hash brown patties, thawed and crumbled (the oval- or square-shaped patties work best)
    # 2 cups shredded cheese (provolone or mozzarella)

    Preheat oven to 350 degrees. Dice onion and place in large skillet. Cook sausage in skillet with onions until done. Add salt and pepper to taste. Drain any fat from skillet and discard. Return skillet to stove and add the crumbled hash brown patties to the sausage mixture. Cook hash browns with sausage only until potatoes become translucent, approximately 4-5 minutes. Remove skillet from heat. Add cheese and mix well. Place entire mixture into an ungreased 8-by-8-by-2-inch baking dish. Bake in oven for approximately 25-30 minutes or until casserole is golden brown.
