    Georgia Peachtree Morning Fritter Toast

    6 ripe peaches, peeled and halved
    1/2 lb. Butter, softened
    1/2 lb. Brown sugar cinnamon to taste
    8 slice brioche or challah bread
    peanut oil
    3 1/2 cups flour
    1 tsp. Salt
    4 egg yolks
    2 cups milk
    1/3 cup melted butter
    1/2 cup butter, melted
    1/2 cup flour
    1/2 quart freshly squeezed orange juice
    3/4 cup sugar
    1/2 oz. Orange zest
    1 cup pecan halves

    Recipe



    1. Butter the center of one piece of bread with 1 tbsp. of butter, add 1 tsp. Brown sugar and dust with cinnamon. Place one or two peach halves in center. Take another piece of bread and repeat butter, sugar, and cinnamon.
    2. Sandwich the pieces together, trim crust and cut in quarters. Dip pieces of the peach bread into batterand deep fry until golden brown (3-4 minutes). Drain well, dust in cinnamon and powsered sugar.
    3. Repeat with remaining bread and peaches. Serve with warm orange peacn butter.

    Preparation for batter:
    1. Combine dry ingredients. Add egg yolks and milk and blend until flour disappears. Stir in melted butter.

    Warm Orange Pecan Butter Preparation:
    1. Cook butter and flour over low heat for 5 minutes.
    2. Add orange juice and bring to a boil.
    3. Cook for 1 minute and add sugar and orange zest.
    4. Bring to a boil and then simmer for 5 minutes. Add peacn halves. Serve over warm fritter toast.

    Servings: 4-6
