    3 cups flour, sifted
    1/2 tablespoon baking powder
    1-1/2 cups warm water
    1/4 cup olive oil
    3/4 pound pork sausage meat, cooked
    3 tablespoons mixed herbs, minced
    salt as needed
    pepper as needed
    vegetable oil as needed

    Recipe



    Sift the flour and the baking powder into a mixing bowl. Add the water and oil, and blend thoroughly. Remove to a lightly oiled bowl, cover, and place in a warm area. Allow to rest 30 minutes.

    Heat vegetable oil (1-inch deep) in a heavy-gauge or cast-iron skillet to a temperature of 365°F.

    Combine the sausage and the herbs, and season to taste with salt and pepper.

    Divide the dough into 1-ounce pieces. Roll them into smooth balls, then flatten. Place a small portion of the sausage on each round, moisten the edges of the dough with water, then seal the dough around the filling. Roll the fritters into smooth spheres. Fry in the oil until golden brown, drain, and serve.
