    # 5 oz. Egg wash
    # 1 tsp. whole milk
    # 2 tsp. unsalted butter
    # 3 oz. Sharp white cheddar cheese
    # 1 oz. Canadian bacon
    # 1 oz. Sautéed fresh spinach
    # 1 oz. Sautéed button mushrooms
    # 1 oz. Sautéed Spanish onions
    # ½ chopped Spanish onion
    # 1 whole Idaho potato
    # salt and pepper to taste

    Recipe



    Heat large saucepan over medium heat. Add 1tsp of unsalted butter & allow to melt. Blend egg wash and milk, whisking mildly. Add egg mixture to skillet pan. After 2 minutes add sautéed spinach, mushrooms and onions evenly on top of egg mixture. After 5 minutes, add white cheddar on top of the mixture, and place in a broiler oven for 1 minute (to melt cheese).

    Home fried potatoes (optional): Boil 1 Idaho potato for 20 minutes. Chop 1 onion and add to a baker pan with potato. Bake at 425 degrees for 20 minutes. Sauté in medium skillet pan with onion for 5 minutes.

    To Serve: In 8" plate with a 1" raised lip, place home fried potatoes around the edge and slide egg mixture into the middle of the plate. Garnish with orange slice.
