    3 medium cooking apples, peeled, cored and sliced
    175g British Medium Mature Cheddar Cheese, finely grated
    ½ teaspoon powdered cinnamon
    50g soft light brown sugar
    50g raisins or sultanas
    175g plain flour
    75g unsalted butter, cubed
    50g caster sugar

    Recipe



    * Preheat the oven to 200°C, gas mark 6. Have ready a large shallow oven-proof dish.
    * Layer the apples, 100g of the cheese, cinnamon, soft brown sugar and raisins in the dish.
    * Put the flour, butter, caster sugar and remaining cheese into a food processor and mix together for a few seconds until the mixture resembles fine breadcrumbs. Alternatively rub the butter into the flour by hand and stir in the sugar and cheese to achieve a crumble mixture.
    * Sprinkle the crumble mixture over the apples, pressing down lightly,
    * Bake for about 30 minutes until the top is a rich golden brown.
    * Serve hot or cold with fresh cream or custard.
