    100g/4oz Flour

    A pinch salt

    2 Eggs, beaten

    300ml/10 fl.oz. Milk

    Grated Nutmeg

    1 tbsp Oil

    300ml/10 fl.oz. Milk

    Grated Nutmeg

    1 tbsp Oil

    1 tbsp Butter

    8 Slices Streak Bacon, halved

    8 Button Mushrooms, thinly sliced

    Black Pepper

    1 teasp Dried Thyme

    Recipe



    1. Place the flour, salt, eggs and milk in a bowl and whisk thoroughly to a smooth batter. Add the nutmeg and stir in the oil. Leave the batter to rest for 30 minutes.



    2. Heat the oven to 220C, 425F, Gas mark 7.



    3. Place 1 teasp butter in each hollow of a 4-hole Yorkshire pudding tin and allow to melt over a low heat. Add 4 pieces of bacon to each hollow and fry slowly until crisp. Halfway through cooking, add the sliced mushrooms. Season to taste with freshly ground black pepper and dried thyme.



    4. Remove the tin from the heat and pour in the batter. Bake immediately in the oven for 15 minutes or until the batter is puffy and golden brown. Serve at once while still very hot.

    Serves 4.
