Brown Sauce

Makes approx 2 litres
List of Ingredients
500ml white wine vinegar (plus another 200-300ml reserved for finishing)
500g soft dark brown sugar
3 apples
2 medium onions, peeled
3 medium tomatoes
1 cup of prunes, stoned
1x250g block of stoned dates
1 tsp ground nutmeg
1 tsp ground allspice
1 tbl black peppercorns
1 tbl salt
Recipe
Roughly chop the apples (no need to peel or de-seed), onions and tomatoes. Place all of the ingredients into a plastic or glass container, cover tightly and put in a cool place. After a minimum of three weeks empty the contents into a blender, and whiz until fine. If you feel it needs it you can pour some more vinegar in until you reach your desired consistency/tartness. Strain through a fine sieve and bottle.
This makes a very tasty sauce, with a much fruitier flavour than the commercial brown sauces
